A delicious quick and easy shrimp and pasta dinner! I made this as a surprise for my husband – a huge shrimp fan – on a night he had to work late. I will be making it again and again as long as he enjoys it!
YOU’LL NEED :
– 1 lb medium shrimp, deveined and tails removed
– 1 lb spaghetti noodles (more or less, depending on family size)
– 6 to 8 minced garlic cloves
– 1/4 cup butter
– Olive oil (3 drizzles)
– Italian seasoning
– Fresh ground pepper
– Red pepper flakes
– Salt herbs (according to taste)
HOW TO MAKE IT :
1. Boil pasta in water till tender, save 1 cup of pasta water for use later. You may want to put some oil, salt, and fresh herbs in with the pasta when you boil it.
2. Drain and set aside when done. You should wash shrimp while pasta is boiling.
3. Melt butter over medium heat.
4. Add shrimp and cook until a little pink and starting to curl then add garlic.
5. Cook 5-7 min. Add oil, stirring constantly until shrimp is pink and curled.
6. Add pasta to skillet. Add seasonings. And please add just enough saved pasta water till it is not dry but not swimming in liquid either.
7. This requires 1/2 of the cup or all of it, depending on amount of pasta. Now, start with adding 1/4 of it then work up from there. Enjoy!
