KETO Raspberry and Vanilla Smoothie

Ingredients

  • 1/3 Cup Raspberries, fresh or frozen
  • 1/2 cup Mascarpone Cheese or Creamed Coconut Milk
  • 1/4 Cup Water
  • 4-5 Ice Cubes
  • 1/2 teaspoon sugar-free vanilla extract or 1/4 teaspoon vanilla powder
  • 1 Tablespoon MCT Oil or Coconut Oil
  • 1 Tablespoon Powdered Erythritol or Swerve
  • Whipped Cream or Coconut Milk (Optional, for topping)

Instructions

  1. Place all of the ingredients into a blender.
  2. Blend until smooth, adding more sweetener if you want it sweeter.
  3. Top with whipped cream or coconut milk, to taste.
